Moroccan Tomato Salad

Ingredients

  • 1 large yellow onion finely chopped
  • 6 large tomatoes seeded and finely chopped
  • 1 english cucumber peeled and finely chopped
  • 1 red bell pepper seeded and finely chopped
  • 3 tablespoons olive oil
  • 3 tablespoons chopped parsley
  • 3 tablespoons chopped chives
  • 1 tablespoon lemon juice
  • Kosher salt and pepper to taste

Instructions

  • In a bowl combine all the ingredients together and keep in the fridge until ready to serve . Serve cold.
  • (Can be refrigerated for 3-4 hours)
