Happy Monday!! I hope you guys all had a fantastic weekend. I had a 24 hour bug on Saturday and felt like I got hit by a car. But thankfully I’m all better. And I’m pretty sure it’s because of these green beans.
I’d like to introduce you guys to the most amazing side dish in the history of side dishes.
Roasted Green Beans with Goat Cheese.
They will change the way you look at green beans. For example, you will want to roast every green bean you come across for the rest of your life and eat them all by yourself. No sharing. No way.
And that’s exactly what I did yesterday. I made a giant batch of these and then proceeded to have a marathon Sons of Anarchy session and eat them all.by.myself.
Do you guys watch Son of Anarchy. I’m gonna be honest, I didn’t think I’d be that into it – but I’m literally hooked. 9 hours straight yesterday. Talk about a marathon SOA session. It was amazing. I couldn’t have asked for a more mind provoking Sunday 🙂 And let’s just talk about Jax. Jacks? However you spell it, I love him.
I’m equally as obsessed with SOA as I am these green beans. I don’t think I’ll be able to make green beans any other way ever again. It’s just that good.
The goat cheese and the garlic and just icing on the cake too! You should make these every day for dinner. Forever.
Roasted Green Beans with Goat Cheese
Ingredients
- 1 lb green beans ends trimmed
- 2 tbsp olive oil
- salt and pepper to taste
- 2 cloves garlic thinly sliced
- 3 tbsp goat cheese
- lemon zest
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 425 degrees F.
- Scatter the trimmed green beans on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and scatter the garlic over the green beans.
- Place the baking sheet into the oven and roast for 12-15 minutes until the green beans are slightly toasty and tender. Remove the baking sheet from the oven and top with the goat cheese, lemon zest and lemon juice. Adjust salt and pepper as needed and serve immediately
I had pretty much this exact thing yesterday! I didn’t add lemon juice, but that’s a great idea for next time 🙂
Katrina–so funny! I was telling Gaby on twitter yesterday that I made roasted string beans on Sunday night too. And I did not share them. And I may not ever make another green bean any other way again. So good!!
Those are some beautiful beans! Love veggies with goat cheese — these look amazing! 🙂
These look great! Love beans, love goat cheese. done.
I have just harvested a large bowlful of beans. This will be the perfect thing to try for dinner tonight! I never thought of roasting them before. Great idea!
These roasted green beans are perfect! Such a quick and easy healthy side dish or snack! 🙂
Love the addition of wax beans which are great straight from the farmer’s market during the summer. Anyway, anything with goat cheese gets the thumbs up from me.
I hope you’re feeling better! Glad the beans helped you turn the corner!
Oh Gaby, I could eat these all day, every day!
I LOVE goat cheese! These look amazing!
Glad to hear you are feeling better after beans and a little telly!
Too funny, you did green beans and goat cheese and I did grapes and goat cheese. I’m pretty sure this isn’t the first time we’ve posted similar things 🙂
Oh yeah, now that’s the way to dress up green beans…creamy and a bit decadent without involving any cream of mushroom soup! Glad you’re feeling better.
Sorry you weren’t feeling well! That’s no fun!
Could totally see how these green beans would cheer you up, though!
Well I’m definitely making this for dinner 🙂 With a bit of black quinoa – oh yeah!
Yum! I made these for lunch because I couldn’t wait till dinner. Yum. I will only ever eat green beans this way, from now on, forever. Loved these for sure.
Sorry to hear you were sick this weekend. Love the simple side dish green beans!
Oh yum, what a great way to serve beans. I am going to share this one on my Facebook page!
I just love roasted veggies, and these beans are no exception. You’re right, the goat cheese is the icing on the cake..ooh and the lemon too…
This is an amazing side dish Gaby. Definitely worth of being dubbed as “the most amazing side dish in the history of side dishes”.
Gaby, These look so delicious… love the goat cheese add… 🙂
Oh my! I just made these and they’re delicious! I love the flavor!
I love roasted vegetables – must try this!
I love the look of the two different color beans! And the goat cheese? I’m in heaven. Yum!
I’ve never seen Sons of Anarchy, but I could look at these beans for like 3 minutes. Then I would just dive in!
I love roasted green beans and then adding goat cheese? Perfect!
We made this, it was fantastic! Things we did different were: upped the garlic to half a head of crushed garlic, we added the goat cheese to the roasting pan right out of the hot oven to get it melty and after a minute dumped it over a bowl of raw spinach and squeezed a whole lemon over it. Super fast dinner! I highly recommended this recipe to anyone, even if you think you don’t like goat cheese!
So glad to hear you loved it Terry!! And I love the alterations you made – I’m going to try that this week 🙂
I came across this recipe today – it was a perfect fit as I had all the ingredients. Well, I made it and it turned out AMAZING! These are indeed addictive and I will be making this often. Thanks!!!
If I don’t have lemons or lemon juice on hand, could I substitute lemon extract? Proportion? Thanks.
no I wouldn’t use lemon extract! Maybe a splash of red wine vinegar?
doesn’t the lemon juice curdle with the goat cheese?
nope!
This was delicious! I followed the recipe exactly, but used 1.5 lbs of green beans so it took a little longer to cook. I will definitely be making this again!
