Mexican Spinach Salad

Anyone who knows me knows that anything with Guacamole is my favorite. I could seriously eat it all day every day… but bikini season is right around the corned and that would just not be good! So in honor of bikini season I have decided to start making tons of salads with delicious and healthy toppings. This first salad with a spinach base with sauteed chicken, bell peppers, yellow and red onions, cilantro and guacamole! Sooo delicious and super quick!

Check out my guacamole recipe by clicking here. Once your guac is ready you can have the whole dinner done in just under 10 minutes! In a large saute pan add 1 chicken breast that has been cubed, and as many bell peppers and onions as you want. Saute these until the chicken has been cooked throughout. Add this onto a bed of spinach and black beans and then top with cilantro and finally your guacamole!

I also made a Cilantro Lime Vinaigrette, which is my new favorite dressing!
How huge is that? And so quick and easy! I made this for Thomas and myself but it was way to much food so it will be lunch tomorrow too! Hope everyone is having a fabulous week! Check back soon for more healthy recipes to get you ready for the summer!

  2. Looks great but I have to admit, I may not be able to resist some tortillas chips! I’m sorry but I haven’t been in a bikini for years so I’m not going to worry about that! 😎

    1. Hey Melinda! here is the recipe:

      * 1/3 cup lemon juice
      * 5 tbsp cilantro, chopped
      * 1/2 tsp ground red pepper
      * 1/4 tsp salt
      * 1/4 tsp pepper
      * 3/4 cup olive oil

      Put it all into a food processor and blend!! enjoy 🙂
